More garden fun

Garden View

This is turning into a gardening blog! And that’s ok – because I really feel eating healthier goes hand in hand with knowing exactly where your food comes from. Two years ago was the start of this journey as we moved to WV and I used the gift of being a stay-at-home mom to work on improving our eating habits – which had become very unhealthy. Last year was my first foray into gardening – with the three beds you see above. I also participated in a local CSA and went to the weekly veggie stand that is 4 blocks from my home. This summer I am back to being a working mom but we have doubled the size of our garden.

One Bed Down

Doesn’t this bed look fabulous? I’m currently harvesting radishes and spinach from it. I have rainbow chard and cabbage that are growing really well. I just transplanted my tomato seedlings into it and also planted onions. This bed if officially full!

Yesterday we ripped out our back fence – it was old and falling down and was also blocking a lot of the light to the bed closest to it.  We replaced the fence with the cute picket fence panels you see on the right. We used the existing fenceposts and repurposed some supports. By adding eyescrews and a lot of twine we created a large funky trellis. We then created narrow planter boxes all along the bottom and planted beans. Below the big sign we created another bed that we planted with sunflowers and perennial wildflowers. The two beds on the right have lettuces, collards, and brussel sprouts going. And I just transplanted some tomatoes as well. I’ll be adding some carrots and beets tonight.

The other new back bed does not look like much right now. I have a zucchini plant going and just planted corn. More on the new front beds in another post.

Lettuce!

Look at this lovely lettuce!!! I made a little salad that I stuffed into a pita pocket and ate for lunch this afternoon. I have enough for a late-night snack or lunch tomorrow. This is my first time growing lettuces and spinach and it’s so awesome to be able to step outside, pull off a few leaves and make a salad!! It doesn’t get any fresher than that!!

I also made a BBQ bean and sausage dish with garden spinach thrown in. And I have a soyrizo chili going in the crockpot – that utilizes frozen bell peppers from last year’s garden!!

We went to the grocery store and spent a grand total of $54 for the week. Mostly because I’m utilizing the garden and cleaning out the freezer in anticipation of more garden bounty!

Garden Bounty

I just posted some pics from the garden. It’s so cool that we are already enjoying a bounty from the garden and it’s only May – radishes and spinach to be specific. I used the radishes in a recent succotash-like concoction, and the spinach is going in a sausage/bean dish tomorrow. I need to harvest some kale and lettuce in the next few days.

It’s been a while…

Can’t believe the last time I posted was August of last year! Well, I can actually as soon after that I started a full-time job, then added a part-time job, and then added several weekly volunteer commitments. It’s been a wild and crazy time!! And cooking just went by the wayside. It was not something I enjoyed anymore as it became something I’ve done it batches when I’ve had a few hours to spare – or I haven’t done it at all and we’ve eaten out.

Both of my jobs are “sit at the computer” jobs – the only time I get up is to check the fax machine. At my full-time job we have unlimited free soda available and I work nights which has thrown my eating and cooking schedule way office. And we have a nice fat stack of takeout menus. Not a good combination. The result of which is that I’ve gained 10 lbs since August.

In recent weeks I’ve made a concerted effort to cook more and have been actually enjoying cooking again. I’ve also been teaching Chris how to cook and that has been a good way for us to spend a little time together.

Tonight we had already had dinner but I had Chopped on and became inspired to do my own version. We have so much random stuff in our freezer – stuff from last year’s garden, store-bought frozen veggies, and some beans from when I was cooking more often.

So I pulled out 4 cups of frozen black-eyed peas, corn from my mother-in-law’s garden, and chopped bell peppers from mine. I added two cans of diced tomates and fresh onion, celery, and spinach. I sauteed the onion, celery, and bell peppers with some diced garlic. Added the tomatoes with the still-frozen beans and corns and seasoned with some Zatarain’s. Once everything defrosted and was warmed through I added the spinach (chopped) and let it wilt down. I’m calling it “Souped-Up Hoppin’ John.” Wow – this stuff is good!! Chris kept walking by and stealing forkfuls as it cooked so I guess he agrees.

And we officially have dinner for Wednesday. Tomorrow Chris is making spaghetti with a side of leftover veggies. Tuesday is a leftover millet and kidney bean dish I made a few days ago. Wednesday is my day off so I’m hoping to be inspired again (and since we will have a meal ready to go I won’t feel obligated to cook if I’m not inspired). And I need to watch Chopped more often. :)

The Fast is Over

The juice fast is over! I lost 8 lbs. and felt really good the whole time. Considering I just ramped up my activities and walking this is a really good indicator of how healthful the fast was. Chris and I have decided to “stay on the juice” for breakfast and lunch for a while. We’ll see if the weight loss continues or levels off.

It was really great to be cooking again. I used a wild rice blend that’s been sitting in the pantry for a while and the children looooooooved. Fabulous, more whole grains they’re into! Corn from our CSA. And the stew-y looking stuff is my version of quick ratatouille – I just threw in some veggies I had in the crisper, the tail-end of some homemade tomato sauce, and a can of navy beans, add some italian season and bam – dinner is done.

Juicing – Part 2

I’ve gotten a few questions about our juice fast.

First, we haven’t chosen a specific program or book to follow. We’re totally going freestyle. I read through two juice cleanse books but they both seemed to include a lot of yoga, meditation, daily themes, etc. Not for us – we just want the juice!

Second, our plan. Juicing for breakfast, lunch, and dinner. Maybe an afternoon juice for me. Water in between. I drink cranberry juice if I’m bored of water.

Third, recipes!  The internet is a fabulous resource! Here’s a few of the recipes we’ve used this week.

Berryliciousness
1 cup blackberries
1 cup raspberries
1 cup blueberries
1 cup cherries, pitted
2 stalks celery
1 lemon
1/2 inch piece of ginger

Pina (pineapple is supposed to help alleviate menstrual cramps – tried it and it worked!)

1/2 pineapple
1 stalk celery
1 lemon, peeled
1/2 inch piece of ginger
1 pint blueberries

Orangey
6 carrots
cantaloupe (I’ve prechopped my cantaloupe so I juice the carrots and then add cantaloupe until I’ve got a full glass of juice)

Simple Apple
2 apples
1 bell pepper

Spinach-y
2 cups spinach
1 handful parsley
4 carrots
1 stalk celery
1/2 beet

Kale/Orange
2 oranges, peeled
1 bunch kale
1/2 inch piece of ginger

Very Veggie

1/2 lemon, peeled
1 inch piece of ginger

Juice Fast!

Chris and I started a juice fast this past Monday. This is completely Chris’ idea! We watched Fast, Sick, and Nearly Dead and he immediately wanted to try it. Our plan is for a 10-day fast. Our goals are weight loss (I want to lose 10 lbs.), improved health, and kick-starting a healthier diet. You may be wondering about the need for a healthier diet – you cook vegan for chrissakes!! But we have been eating out (we eat omni out in the world) a lot recently and we both have felt rather sluggish as a result.

Prep

Diet – no prep. I had read about eating more raw and unprocessed foods a couple of days before your fast, quitting caffeine, etc. But we have been off caffeine and high fructose corn syrup for a while so we just took the plunge.

Information – I checked out a few books on juice cleanses from the library – none really thrilled me but I did obtain a few good recipes from them. I found much more useful stuff on the web – particularly – Spabettie – lots of fabulous recipes and info over there.

Groceries – Wow! Juicing is an expensive proposition. I went through all the stuff we already had and built a 5 day plan around them. We’re on Day 4 and we’ve gone through a 5 lb. bag of carrots, a huge bin of spinach, a bunch of kale, a cantaloupe, a pineapple, 3 oranges, 3 beets, a few bell peppers,lemons, limes, and lots of celery.

I hit our local produce stand  this morning and bought a ton of stuff for only $14!! Melons, bell peppers, and squash. I may go back later this morning for more stuff – my back and backpack couldn’t handle anymore on my first trip. And my mother-in-law is visiting today and will be bringing corn, cucumbers, and beans.

The Fast, So Far…

Monday – Day 1 was a little rough, Chris and I both had periods where we had major headaches. But, by the end of the day we both felt fine. Monday also happened to be the start of my new job as a dog nanny and the first day of school for the kids. The kids and I are walking to the school in the morning, and I walk to the doggie job twice a day. Total walking 4.6 miles. Lots of new things to start on one day – we went to bed early that night.

Tuesday – Day 2 – no problems until a meeting in the evening that I had forgotten about. The meeting happened to be at Chris’ work so he had food there to feed the kids dinner. I, howeve,r spent 3 hours in a small room with nothing but water. When I got out of the meeting I discovered Chris had promised the kids Krispy Kreme. Eeek – I am powerless against Krispy Kreme – especially when I’m starving and tired. I had one doughnut – and immediately felt ill. Food fail!!!

Wednesday – Day 3 – Adjusting to our new schedule, body adjusting to all of the walking and playing with the dog. I also spent time in the morning digging out where I want to put gravel and another raised bed. Another early night.

Thursday – Day 4 – So far, so good. Chris and I have lost 7lbs. each. I’m not missing food. The kids are still eating well, I’m keeping it quick and easy so I’m not around the food for very long. Tonight we’re going to Chris’ brother’s house for dinner. I might eat, I might not. I’m definitely planning on juicing before so if I do eat it will only be a little bit.

Wrapup

Life is good. Chris and I both have a lot of energy. We can actually see the results already in our bodies. Neither of us is feeling deprived. We’ve talked about what we want to do after the fast – and right now we’re thinking juices or smoothies for breakfast, eating raw or dinner leftovers for lunch, and keeping it vegan for cooking at home. Chris has also mentioned extending the fast to 15 days – we’ll see how we feel as we get close to the end of our 10 days.
